2 teaspoons olive oil
8 strips of bacon, cooked cooled & chopped, divided
2 teaspoons minced garlic
1 9 ounce packet frozen spinach, thawed completely and squeezed dry, roughly chopped
1 9 ounce jar marinated artichoke hearts, chopped
1 8 oz packet light cream cheese
1/2 cup sour cream
1/2 cup reduced fat mayonnaise
1/2 cup milk
Salt and pepper, top taste
1/2 cup fresh Parmesan cheese, divided
1/2 cup grated mozzarella, divided
To garnish
2 scallions, thinly sliced
Preheat oven to 350°F.
In a large bowl combine half the bacon, the garlic, thawed and dried spinach, artichokes, cream cheese, sour cream, mayonnaise, milk and salt and pepper to taste. Add in 1 cup of the mozzarella cheese and 1/4 cup of parmesan cheese, and gently fold to combine.
Transfer to an oven safe dish and top with remaining mozzarella and parmesan. Bake in the oven for 20 minutes on a line baking tray for easy clean up. Remove once golden brown and bubbly.
Top with remaining bacon and scallions and serve hot.
